Mashed Sweet Potato 🍠

📍 Introduction

Mashed sweet potatoes can serve as a nutritious, filling, and economical addition to many meals. While you can also bake or roast sweet potatoes to soften them, boiling helps retain their moisture, which prepares them well for mashing. 

🧂 Ingredients & Equipment:

  • 2 sweet potatoes/yams

  • Veggie Scrubber (like these) or a clean scouring pad (like these)

  • Large fork or potato masher (like this

✔️ Instructions: 

  1. Boil water in a large pot & season to taste 

  2. Rinse potatoes & scrub off dirt  

  3. Add to water. Let cook ~20 min or until a knife easily pierces the skin 

  4. Remove & drain. Let cool or rinse with cold water. Remove skins.  

  5. Mash with a fork or potato masher 

  6. Add oil/butter & salt (optional) 

📝 Notes, Tips, Tricks

  • To prep sweet potato cubes instead, remove skins with a veggie peeler, chop into cubes and boil until tender. 1-inch cubes will take 12-15 min, 2-inch cubes 20-25 min.
